Caketails - Lemon Cheesecake
A little while ago I had an idea for a mini series. We love cocktails, you can check out our mini bar mini dresser here, but what could be more fun than cocktail recipes inspired by cakes?!
So I had a go at one... and then never got round to posting the photos!
Here it is - my lemon cheesecake inspired caketail!
- Brandy (to give warmth and depth for the base)
- Limoncello (for the creamy lemon filling)
- Cava/Prosecco - I used a supermarket brut (for the lighter refreshing after taste)
- Angostura Bitters
- Candied lemon peel (to garnish)
Pour a tiny splash of brandy in the bottom of your glass. Add a measure of limoncello and using a flat based cocktail spoon, pour a layer of cava onto the base of the cocktail. Hold the base of the spoon and pour the cava down the long handle, raising the spoon as you pour.
I then added a splash of bitters (Because we stick them in everything!) and a garnish of candied lemon peel.
Creamy but refreshing!
We have a well stocked bar at the moment on account of the muggy weather (Which never makes you feel like an adventurous cocktail does it?), being snowed under with work and having a hacking cough. You know when I am really ill as there are no wine glasses to wash up ;)

Any favourite cakes to inspire or challenge me?! I am itching to use the white and milk chocolate liqueur next!
